Spring Boot, Thymeleaf, Dynamic Data from Web Services.

First of all, I'm an old C/C++/C#/ASP Classic - .NET windows developer..   I'm being refocused into Java on UNIX using MicroServices, so I apologize up front for any stupid questions.    I've created a basic Spring Boot service with services, restful responses etc, works great, might come back it.   However I found Thymeleaf is what I need to have actual web pages within my Spring Boot service.   I've created successfully a Spring Boot with Thymeleaf based on Spring Framework Guru:

Now I'm having problems with this tutorial to access data:

Page starts out with some obvious assumption, one of which, I know what I'm doing.   I'm unable to use these functions in the IndexControler as that is only expecting a page name to be returned.   Where do these methods go?   Is it a different controller?   I'm just trying to make some dynamic data driven pages of which the data is coming from WebServices we already have in place.

Can anyone suggestion some good books and web sites for good documentation that is at a more basic level for someone that has never developed in Java for UNIX?
